    This week has been complete and total chaos. I just began thinking about Christmas shopping while trying to get all of the holiday baking done and shipped off, while still attempting to get actual work done. Oh, and our poor little doggie, Pixel, went in for knee surgery in the middle of it all. Poor lil pup has been recovering for 3 days, but she's already bored with bedrest and ready to get out in the yard and chase squirrels. She still has 7.5 weeks of recovery left. This is going to be a long 2 months.

    With all of that said, I don't really have time to write up a post or get too involved with holiday treat ideas. I'm guessing if you're still searching for holiday treats to give out this Christmas, you're probably just as short on time as I am. I feel your pain. I whipped up the quickest, simplest, yet tastiest and cutest holiday treat out there.

    This recipe for Snack Attack Chocolate Bark contains all you want for Christmas; a snacky mix of sweet and salty flavors that mixes and sets up before you'd even find a parking spot at the mall. Also, this Snack Attack Chocolate Bark is as adorable as all getout and makes a big ol' batch to share with that long list of family, friends and neighbors you still have yet to buy a gift for. Get to it folks, you're running out of time!

    Guys, I never realized until recently how darn easy it is to pop corn. As a child of the 80s I thought you needed one of those crazy spaceship looking contraptions or a microwave to pop corn. Apparently you just need a pot with a lid and some oil. So easy!

    Close to losing it this season, thank goodness my pal Thiago hooked me up with 36 lbs. of chocolate this year. Everybody gets chocolate bark for Christmas this year!

    Use an offset spatula to smooth the chocolate out into an even layer on a lined baking sheet.

    Then drizzle on your second chocolate layer, fo shizzle.

    Pull a small thin object (I used a chopstick) vertically through the horizontal lines to make a pretty pattern with the chocolates.

    While the chocolate is still melty, dot it with the white chocolate dipped pretzels.

    Then sprinkle on the peanuts, popcorn, sprinkles and sea salt.

    Description

    With a mix of chocolates, pretzels, popcorn, salted peanuts a pinch of salt and festive sprinkles, this Snack Attack Chocolate Bark is the ultimate gift of salty sweet snacking.


    Ingredients

    Units
    • semi-sweet chocolate chips - 4 cups
    • dark chocolate chips - 1 cup
    • freshly popped popcorn - 1 cup
    • white chocolate dipped pretzels (I made my own - 1 cup)
    • salted peanuts - ½ cup
    • sea salt flakes - 1 teaspoon
    • festive sprinkles - 1 tablespoon

    Instructions

    1. Line a baking sheet with parchment paper and set aside.
    2. Heat about 2" of water in a large double boiler. If you don't have one, MacGyver yourself one with a mixing bowl atop a large heavy pot. The bowl should easily sit on top of the pot with at least a few inches between the water and the bottom of the bowl.
    3. With the water simmering, add the 4 cups of semi-sweet chocolate to the large mixing bowl. The chocolate will begin to melt after a minute or two, gently stir with a heatproof spatula until the chocolate is completely smooth and melted.
    4. Gently pour the melted chocolate onto the lined baking sheet. Use a spatula or an offset spatula to smooth the melted chocolate towards the edges of the parchment paper, into a smooth, even layer.
    5. Melt the dark chocolate over a double boiler. Drizzle the dark chocolate, in vertical lines, over the the semi-sweet chocolate. Then using a thin object (I used a chopstick) gently drag the stick horizontally back and forth through the vertical lines, creating swirly wheat, latte-art style design.
    6. While the chocolate is still melted, gently top with white chocolate dipped pretzels, popcorn, peanuts, sea salt flakes and festive sprinkles.
    7. Place the entire baking sheet in the refrigerator for at least 30 minutes while the chocolate sets and hardens.
    8. Using a big, sharp knife, cut the Snack Attack Chocolate Bark into snack sized chunks and eat all of the small bite sized bits while you package it up for gifts.
