    Breakfast: half of a crumbly, dry granola bar washed down with approximately 6 cups of black coffee in the car on the way to work. Lunch: a handful of stale popcorn, a petrified string cheese that's been in the office fridge longer than you've worked there and 2 Grapefruit LaCroixs. Afternoon Snack: More coffee and a few bites of the grocery store donuts left out from the morning meeting. Does this sound familiar to you? Maybe it's time to try some Muesli Almond Energy Balls.

    I hear you. I've been there. I get it. Who has time to prepare one those beautifully curated, leafy green bowls layered with 47 different ingredients that you see plastered all over Instagram? I'm lucky if I can dunk a banana in the peanut butter jar before noon.  While I would love to eat like an Instagram photo for every meal of the day, we all know that's not happening. 

    Most days I just need a little something to get me through until the next meal. That's why when I partnered up with Bob's Red Mill this year, I knew I wanted to incorporate their Old Country Style Muesli into a quick and easy recipe that helps keep my energy boosted all day long. So I got rolling on a new recipe for Muesli Almond Energy Balls. This recipe combines just 6 ingredients, comes together within minutes and packs enough energy to get you gracefully from coffee to cocktails.

    Just 6 ingredients

    These energy balls start with heart healthy, toasted Bob's Red Mill Old Country Style Muesli; a blend of whole grains, nuts, seeds and dried fruit. Protein rich almond butter, organic honey and a sweet kiss of maple syrup bind things together and bring a velvety texture to the centers of the Muesli Almond Energy Balls. A shake of Bob's Red Mill Flaxseed Meal adds a nutritious blend of omega-3 fatty acids, you know the "good fats". Then the Muesli Almond Energy Balls get rolled in toasty, chopped, slivered almonds for a crunchy contrast to the chewy centers. 

    While whipping up a batch isn't quite as fast as hitting up a vending machine, they really do come together in a snap and make a whole big batch that you can snack on all week. If you're really short on time and can't spare 8 minutes to toast the muesli and almonds, you can absolutely skip that step and have a batch of Muesli Almond Energy Balls made in under 10 minutes, flat.

    This one is for you, the overworked and exhausted folks out there who just want a little pick me up to get them through the days. I feel you, bro. I got you. I promise, these Muesli Energy Balls are worth the few minutes it takes to roll them up. They'll fuel you with the energy you can't muster on your own and are all that and tastier than a bag of chips.

    Description

    Hearty muesli, protein packed almond butter, omega rich flaxseed meal, honey & maple syrup combine forces in these energy boosting balls with a crunchy almond exterior.


    Ingredients

    Units
    • 2 cups Bob's Red Mill Old Country Style Muesli
    • ¾ cup slivered almonds
    • 1 cup almond butter (*or other preferred nut butter)
    • ½ cup honey
    • ½ cup flaxseed meal
    • 2 tablespoons maple syrup

    Instructions

    1. Preheat oven to 350°F. Spread the muesli in an even layer on a baking sheet and the almonds in an even layer on a second baking sheet. Toast for about 8 minutes until everything is golden and gives off a nutty aroma. Set aside and allow to cool.
    2. Roughly chop the cooled raw almonds and place in a shallow bowl for rolling.
    3. In a large mixing bowl, stir together the nut butter, honey, flaxseed meal and maple syrup until blended. Stir in the cooled muesli and mix until blended.
    4. Using a 2 TB sized cookie scoop, form balls. Roll in hands to smooth out the balls and then roll each ball in the chopped almonds. 
    5. Return to the lined baking sheet. Chill for at least 30 minutes and keep fresh in the refrigerator for up to 10 days.

    • Cook Time: 8 minutes

      This looks great! Can you make this without the honey and maple syrup? I 'm trying to eliminate added sugars.

        Hi there! Sure, they are really there to bind things together. Alternatively, you could use dates, more almond butter or even a bit of coconut oil as binders.
