These Healthier No Bake Cookies have all of the attributes of the beloved classic but come in a more wholesome package. Combining simple, whole ingredients like rolled oats, coconut oil, almond milk, peanut butter, coconut flakes and naturally sweet maple syrup instead of sugar, this no bake cookie recipe is a healthier alternative to the original.
Ingredients
1/4 cup coconut oil
1/4 cup maple syrup
1/4 cup almond milk
2 tablespoons unsweetened cocoa powder
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
1/4 teaspoon fine sea salt
1 1/2 cups whole rolled oats
1/2 cup coconut flakes
flaky sea salt to taste - optional
Instructions
Line a large baking sheet with parchment paper.
In a medium saucepan, melt the coconut oil over medium heat. Add the maple syrup, almond milk and cocoa, whisk to combine. Bring up to a boil, whisking often. Once boiling, stop whisking and allow to boil for 1-2 minutes.
Remove from heat and stir in the peanut butter, vanilla and salt. Then add the oats and coconut flakes, stirring together until coated. Allow the mixture to sit for 5 minutes so the oats can absorb some of the moisture.
Use a 2 tablespoon sized cookie scoop to cookies onto the prepared baking sheet. Then use the back of the scoop to flatten the cookies slightly. Top with flaky sea salt, if you're into it. Chill for at least 1 hour or until firm.
Notes
Store these cookies in an airtight container in the refrigerator. At room temperature they will soften and lose their shape.
